Assistant Scientist Job Overview
PepsiCo is seeking an R&D Product Development Assistant Scientist (Europe Foods) to join its team in Leicester.
The R&D Assistant Scientist supports the effective delivery of projects within the Europe Foods R&D team in alignment with the EMEA Annual Operating Plan (AOP). The role involves prototyping, leading factory trials, and supporting cross-functional partners (e.g., specifications, ZBRs, resolving quality issues) related to the product portfolio.
Responsibilities
Reporting to the R&D Manager, the individual is responsible for:
- Supporting the execution of multiple product development projects for Europe Foods, including renovation and innovation workstreams to enable AOP delivery and innovation pipeline development.
- Leading aspects of product development independently, while escalating issues when required.
- Leading benchtop recipe development and prototyping aligned with marketing-led concepts, and providing R&D input into concept development.
- Contributing to initiatives that improve ways of working, such as enhancing business processes for efficiency, sharing knowledge to strengthen team cohesion, and developing others by embedding best practices.
- Collaborating effectively with cross-functional teams and R&D discipline partners.
- Leveraging functional and business expertise to shape and develop technical elements of consumer propositions that drive sustainable business growth.
- Executing complex technical projects using project management tools and skills to ensure timely delivery, adherence to agreed standards, and budget compliance.
- Applying consumer product testing, sensory evaluation, and analytical data to support successful product launches through accurate technical product specifications.
- Applying technical and business governance processes effectively from feasibility through scale-up and post-launch support.
Qualifications
- A degree in Food Science, or a related discipline, or equivalent experience.
- A minimum of 2–3 years of experience in FMCG R&D product or technology development roles, managing new product development (NPD) projects from concept to launch, preferably within snack food categories.
- Demonstrated understanding and application of consumer product testing, sensory evaluation, and analytical methods.
- Experience coordinating third-party manufacturers and/or suppliers to achieve business objectives.
- Experience working across multiple product areas.
- Strong analytical skills to interpret complex data and translate it into meaningful insights, including process data interpretation, experimental design, and statistical analysis.
- A solid understanding of the broader business environment and the ability to apply technical and commercial knowledge during project execution.
- Strong interpersonal and communication skills, with the ability to influence stakeholders at senior levels within R&D and Supply Chain, and to build effective relationships across diverse teams and cultures.
