Educational Requirements for the Food Technologist Role:
- Degree or qualification in Food Science, or equivalent (desirable)
- Relevant experience in food technical, quality, or specification roles within hospitality or foodservice
Key Responsibilities:
- As a Food Technologist, you should review and approve final recipes to ensure food safety and alignment with approved raw material specifications
- Create, review, and maintain ingredient, recipe, and finished dish specifications
- Develop and manage allergen matrices, ingredient breakdowns, and nutritional data
- Maintain data within specification or menu management systems
- Collaborate with suppliers to ensure accurate, up-to-date specifications
- Ensure compliance with UK food safety and allergen legislation, including the Food Information Regulations and Natasha’s Law in the Food Science Jobs at Fortnum & Mason
- Maintain accurate allergen declarations for menus and customer information
- Support allergen risk assessments and change controls
- Monitor legislative updates affecting hospitality operations
- Liaise with suppliers to obtain ingredient and product specifications in the Food Technologist Role.
- Review supplier documentation for traceability, allergen accuracy, and compliance
- Support procurement with technical approval of suppliers and products
- Support menu launches, seasonal updates, and recipe reformulations
- Manage specification updates for menu and supplier changes
- Support HACCP systems, audits, EHO visits, and third-party assessments
- As a Food Technologist, assist with customer complaints, allergen incidents, and investigations
Skills Required for the Food Technologist Role:
- Experience in food technical, quality, or specification roles within hospitality or foodservice
- Strong knowledge of food safety, allergens, and hospitality legislation
- High attention to detail and strong data management skills
- Ability to work cross-functionally with chefs, procurement, and operations
- Experience with menu management or allergen software systems
- Knowledge of HACCP and food safety standards
- Experience supporting multi-site hospitality operations
