Position Summary
The Baking Technology Manager provides technical leadership and baking expertise across assigned regions, supporting both Bimbo Bakeries USA (BBU) and Co-Pack Sweet Baked Goods operations. This role leads product implementation, process optimization, safety initiatives, and continuous improvement efforts with a strong focus on product quality, consistency, safety, and sustainability.
The position also includes people leadership, mentoring direct reports, and cross-functional collaboration with Operations, R&D, Engineering, Marketing, Finance, and Procurement.
Key Responsibilities
- Provide regional leadership in ingredient technology, formula optimization, baking processes, and continuous improvement
- Manage and develop direct reports, including coaching in ingredient functionality, product performance, and manufacturing processes
- Prioritize projects, resources, and workloads to ensure timely and high-quality execution
- Troubleshoot bakery issues and support corrective action implementation
- Support R&D, Engineering, Marketing, and Operations trials for new formulas, ingredients, equipment, and technologies
- Lead product scale-up, commercialization, reformulations, and cost savings initiatives
- Coordinate qualification kick-offs, test bakes, and launch execution with Operations teams
- Monitor post-launch product quality and adjust formulas or processes as required
- Address product quality concerns, consumer complaints, waste reduction, and sustainability initiatives using statistical and CI tools
- Serve as key technical resource for process and equipment modifications
- Train bakery associates using data logger technology and process analytics
- Conduct formula audits and collaborate with R&D on corrective actions
- Maintain and publish updated product code books
- Drive productivity initiatives in collaboration with Finance, Procurement, Engineering, and Operations
- Document weekly travel results and communicate follow-ups to Operations leadership
- Perform additional duties as assigned
