Mars Principle Flavor Scientist The Cocoa Flavor & Science Principal Scientist role is a senior research role within the Global Science and Technology team in R&D. The associate will identify, formulate, shape, and execute a comprehensive program in Cocoa Flavor and Plant Chemistry that will drive the cocoa strategy to deliver against business objectives.

Job Summary:

Flavor understanding and development are critical and leading capabilities for Mars Wrigley. The Cocoa Flavor Principal Scientist is expected to lead research initiatives in support of Global Cocoa R&D programs related to all aspects of flavor chemistry and flavor development, as well as collaborate with cross-functional teams within R&D and other functional teams in Supply, Commercial, Finance, Legal, Regulatory Affairs, Intellectual Property, and Mars Advanced Research Institute (MARI). More specifically, the Cocoa Flavor Principal Scientist will provide expertise to support the business objectives of internal Mars Wrigley stakeholders by providing strategic technical direction specifically in cocoa flavor chemistry, analytical methods/protocols as well as technical training and lead research initiatives which increase the foundational understanding of flavor science. The associate will be responsible for designing comprehensive research strategies to understand raw ingredients and process technologies. The Principal Scientist is expected to have a high level of technical skills across a breadth of disciplines, proven track record in leading complex flavor research initiatives, preferably related to Cocoa. They will share knowledge and insights with the business and partner with suppliers, universities and research consortia to strengthen Mars Wrigley’s global position in snacks and treats.

What we are looking for:

Minimum Requirements:

  • Bachelors degree in chemistry biochemistry, engineering, food science with at 5+ years working with cocoa flavor
  • Masters degree 3+ within flavor research
  • Previous experience successfully leading complex research programs
  • Previous experience within flavor analytical flavor instruments.
  • Travel up to 25%

Strongly Preferred Qualifications:

  • Ph.D. in chemistry, biochemistry, engineering, food science
    Demonstrated ability to create a compelling vision and influence the business in pursuing a particular direction.
  • A proven track record managing complex projects executed by cross-functional teams, a demonstrated ability in holistic program management and a demonstrated ability to inspire and influence stakeholders.

Key Responsibilities for Mars Principle Flavor Scientist 

  • Manage use of external laboratories, university affiliations, and temporary labor alternatives
  • Responsible for technical competency development of associate scientists/scientists on the team
  • Provide holistic program leadership; identifies, formulate, shape and execute a comprehensive flavor research program
  • Operate through the internal and external science networks to articulate the research ambitions, objectives and actively manage involved parties to deliver the milestones to the agreed quality standards and timelines.
  • Play an active role in program governance and adherence of the projects to the Mars Science Operating System principles. Be cocoa flavor & plant chemistry connector to the plant science Research Advisory Board (RAB), Strategic Advisory Board (SAC) and Mars Advance Science Institute (MARI).
  • Analyze raw materials and/or finished products for their aroma and taste properties using a range of instrumentation including, but not limited to, preparative and analytical chromatography, mass spectrometry and gas chromatography-olfactometry.
  • Identify and implement new plant chemistry, biochemistry and flavor science instrumentation to keep current with technology and drive business objectives
  • Lead the development of innovative methodologies for plant research as required by the program
  • Assure research is peer reviewed and is “publication quality” whether the business chooses to publish internally or externally.
  • Maintain proper documentation of flavor research and write technical reports, which enable data to be utilized by the business
  • Oversee preparation of product prototypes by scientists when necessary to support the research activities
  • Keep current with the literature in the field and recommends the adoption of new techniques and /or research opportunities.
  • Collaboratively works with Intellectual Property (IP) team, generate and maintain world class knowledge and IP strategy early on latest emerging technologies, global scientific and technological advances in areas of concern, including competitive IP awareness and monitoring.
  • Actively support the development of yearly operational and CAB budgets with the Senior Manager of Cocoa Flavor Science. Manage, monitor and deliver the approved budgets in programs the role is accountable for.
  • Build efficient interfaces between Cocoa Flavor Science and key internal partners securing alignment in program directions, infrastructure development, enabling the potential cross-fertilization, synergies and information flow.
  • Be an active member of the Confectionery Flavor community.
  • Inspire, influence and engage the business stakeholders (R&D leadership, Q&FS, Commercial, Supply and origin leadership teams) by generating a compelling vision of how progress in flavor and plant chemistry research unlocks the ability to achieve business objectives in delivering the cocoa strategy.
